Ingredients

  • soy sauce 0.5 cups
  • rice vinegar 2 tablespoons
  • honey 3 tablespoons
  • garlic clove 1 clove
  • fresh ginger root 1 teaspoon
  • salmon fillet 4 pieces
  • white rice 4 servings
  • broccoli 4 servings
  • carrot 1 piece
  • sesame seeds 1 tablespoon

Instructions

  1. Mix the soy sauce, rice vinegar, and honey in a bowl until the honey dissolves.
  2. In a shallow bowl or baking dish, combine half of the sauce mixture with the garlic and ginger, if using.
  3. Set the remaining sauce aside for serving.
  4. Place the salmon flesh-side down in the marinade and spoon some marinade over the top to coat the sides. Let it marinate.
  5. Place an oven rack in the top position and preheat the oven broiler to high.
  6. Place the marinated salmon skin-side down on a foil-lined baking sheet or baking dish.
  7. Broil until the salmon is caramelized and cooked through at the edges but still slightly pink in the center.
  8. Let the salmon rest briefly after cooking.
  9. If not already prepared, cook the rice or rice noodles and prepare the vegetables for serving.
  10. Assemble bowls with rice or noodles, vegetables, and the cooked salmon.
  11. Spoon over the reserved sauce and top with sesame seeds or sliced scallion, if desired.
