Ingredients

  • chili powder 2 teaspoons
  • sweet paprika powder 1 teaspoon
  • ground cumin 1 teaspoon
  • salt 1 teaspoon
  • onion powder 0.5 teaspoons
  • garlic powder 0.5 teaspoons
  • cayenne pepper 0.25 teaspoons
  • halloumi cheese 250 grams
  • avocado oil 1 tablespoon
  • avocado oil 2 tablespoons
  • bell pepper 3 pieces
  • white onion 1 piece
  • dried oregano 1 teaspoon
  • lime 0.5 pieces
  • wholegrain tortilla 8 pieces

Instructions

  1. Combine all the fajita seasoning ingredients in a small bowl and mix well. Set aside.
  2. Mix half of the fajita seasoning with the oil. Rub the mixture all over the halloumi strips and set aside.
  3. Heat the oil in a large skillet over high heat until shimmering. Add the bell pepper and onion strips and sauté, tossing occasionally, until tender-crisp with a bit of charring.
  4. When the vegetables are almost done, stir in the remaining fajita seasoning and the dried oregano. Transfer the vegetables to a bowl and wipe the skillet clean.
  5. In the same skillet over medium heat, pan-fry the seasoned halloumi strips for a few minutes on each side until golden brown.
  6. Return the vegetables to the skillet, add a squeeze of lime juice if using, and toss gently to combine.
  7. Serve immediately with warmed tortillas and your favorite toppings.

Storage suggestions

Store leftovers in the fridge for up to 5 days in an airtight container and quickly reheat in a pan before serving. Halloumi is best served immediately for the best texture.
