Ingredients

  • extra virgin olive oil 2 tablespoons
  • ground chicken 1 pound
  • salt 1 teaspoon
  • ground black pepper 0.5 teaspoons
  • orange juice 0.75 cups
  • coconut aminos 0.333 cups
  • date 8 pieces
  • garlic clove 1.5 tablespoons
  • potato starch 1 tablespoon
  • dried chilli flakes 0.5 teaspoons
  • cauliflower 12 ounces
  • water 0.5 cups

Instructions

  1. Heat the oil in a large saucepan over medium heat until hot.
  2. Add the ground chicken, season with salt and ground black pepper, and cook until no longer pink.
  3. Combine the dates and hot water in a blender or food processor. Let them soak briefly, then blend until smooth to make a paste.
  4. Whisk together the orange juice, coconut aminos, date paste, minced garlic, potato starch, and crushed red pepper in a medium bowl.
  5. Cook the cauliflower rice until tender, or cook the rice according to package directions.
  6. Add the sauce to the cooked chicken and cook until thickened.
  7. Serve the orange chicken over the cauliflower rice or rice.
