Simple fish cakes made with raw cod, without any potatoes. They have a light, firm texture and a crispy panko coating, and thanks to the short cooking time they are quick to make.

Ingredients

  • cod fillet 450 grams
  • parsley 4 tablespoons
  • white part of green onion 2 pieces
  • egg 2 pieces
  • salt 0.5 teaspoons
  • ground black pepper 1 to taste
  • panko breadcrumbs 8 tablespoons
  • extra virgin olive oil 2 tablespoons

Instructions

  1. Cut the cod into pieces and place it in a food processor. Pulse briefly so the fish is broken down, but not turned into a paste.
  2. Transfer the fish to a bowl and mix with the parsley, green onion, salt, pepper, and most of the panko, reserving some for coating. Mix thoroughly.
  3. Shape into large, round fish cakes, pressing the mixture firmly so it holds together, then flatten them slightly. Brush both sides with the beaten egg and coat in the remaining panko.
  4. Heat some of the olive oil in a large frying pan over medium heat and fry the fish cakes on both sides until cooked through and nicely browned on the outside. After turning, add more olive oil if needed.

Serving suggestions

Serve with coleslaw, potatoes, or salad, and squeeze over some lemon. From 6 large fish cakes, one portion is 2 pieces.

Storage suggestions

Raw fish cakes without the egg and panko coating can be frozen in an airtight container, layered with paper, for up to 3 months. Thaw before frying, then brush with egg, coat in panko, and fry.
