Red Lentil Veggie Patties

These vegetarian lentil patties are lightly spicy, packed with vegetables, and can be cooked on the stovetop or baked in the oven. They are freezer-friendly and ready in about 30 minutes.

Ingredients

  • red lentils 1 cup
  • water 2 cups
  • salt 0.5 teaspoons
  • extra virgin olive oil 1 tablespoon
  • bell pepper 1 medium piece
  • carrot 0.5 cups
  • white part of green onion 0.5 cups
  • oat flakes 0.75 cups
  • cilantro 0.25 cups
  • chilli garlic sauce 1.5 tablespoons
  • ground cumin 1 teaspoon
  • dried chilli flakes 1 pinch
  • egg 1 large piece
  • wheat bread 6 pieces
  • baby spinach 1 handful
  • guacamole 1 cup

Instructions

  1. Combine the red lentils, water, and half of the salt in a pot. Bring to a rapid simmer over medium-high heat, then reduce to a gentle simmer over medium-low heat. Cover and cook until the lentils are tender.
  2. Drain the cooked lentils well and gently remove excess moisture.
  3. While the lentils cook, heat a skillet over medium heat and add the olive oil. Add the bell pepper, carrot, and green onion, then sprinkle with the remaining salt. Sauté until softened, stirring occasionally.
  4. Transfer the cooked lentils and sautéed vegetables to a large bowl. Add the rolled oats, cilantro, chili garlic sauce, ground cumin, red pepper flakes if using, and the whisked egg. Stir until combined.
  5. Form the mixture into six patties, making each about the width of your palm and no more than 1/2 inch thick.
  6. Cook the patties on a lightly oiled skillet over medium heat until golden on both sides.
  7. Serve the patties on burger buns with spinach, guacamole, and other preferred toppings such as tomato.

Serving suggestions

Serve in buns or wraps with salad and guacamole.

Storage suggestions

Keep leftovers refrigerated in a closed container for up to 3 to 4 days. Freeze individual cooked or uncooked patties for up to 3 months. Reheat on the stove or thaw overnight in the refrigerator.
