Greek Lemon Marinated Chicken Breasts

Chicken breasts are marinated in olive oil, lemon, honey, garlic and dried oregano, then cooked on a grill or grill pan and finished with fresh parsley. The recipe uses thin chicken breasts for even cooking and a classic Greek-style lemon-herb flavor.

Ingredients

  • chicken breast 1.25 pounds
  • extra virgin olive oil 0.5 cups
  • lemon 1 piece
  • lemon juice 0.25 cups
  • honey 1 teaspoon
  • garlic clove 1 tablespoon
  • dried oregano 2 teaspoons
  • salt 1 teaspoon
  • ground black pepper 0.5 teaspoons
  • parsley 1 tablespoon

Instructions

  1. Combine the olive oil, lemon zest, lemon juice, honey, garlic, dried oregano, salt and black pepper in a bowl and whisk until mixed.
  2. Add the chicken breasts to the marinade and coat well. Marinate in the refrigerator for at least 30 minutes or up to 8 hours.
  3. Heat a grill pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through, turning once halfway through cooking.
  4. Let the chicken rest, then sprinkle with chopped parsley. Serve with lemon wedges and parsley sprigs if desired.

Storage suggestions

Store leftover chicken in the refrigerator for up to 3 days or in the freezer for up to 2 months.
