These cookies are slightly crisp on the outside and a little chewy inside. Made with chickpea flour, eggs, coconut, and chocolate chips, they are a more filling sweet snack with protein and fibre.

Ingredients

  • chickpeas 1.5 cups
  • baking powder 1 teaspoon
  • salt 1 pinch
  • coconut nectar 0.3333333333 cups
  • maple syrup 3 tablespoons
  • shredded coconut 4 tablespoons
  • egg 2 pieces
  • coconut oil 0.3333333333 cups
  • vanilla extract 3 teaspoons
  • chocolate chips 0.5 cups

Instructions

  1. Preheat the oven to 180°C (350°F). Line a baking tray with baking paper.
  2. Combine the chickpea flour, baking powder, salt, coconut sugar, and desiccated coconut in a large bowl.
  3. Add the whisked eggs, melted coconut oil, maple syrup, and vanilla.
  4. Mix until a dough forms.
  5. Fold in the chocolate chips.
  6. Chill the dough in the fridge for 20 minutes.
  7. Scoop spoonfuls of dough onto the prepared tray. The dough will still be a little sticky.
  8. Gently press each cookie down slightly to flatten.
  9. Bake until lightly golden.
  10. Cool completely before storing.

Serving suggestions

A lunch box treat, or with a glass of milk. Makes 12 cookies — 2 per serving.

Storage suggestions

Store in an airtight container in the fridge for up to 5 days, or at room temperature for 2–3 days in a sealed container. Freeze for up to 1 month for the best texture and flavor.
