Vegetable rice paper rolls with cheese
Fresh rice paper rolls filled with lettuce, carrot, cheese and alfalfa sprouts. They are easy to make, kid-friendly, suitable for lunchboxes and work well as a simple party food.

- rice paper 6 pieces
- lettuce 1 cup
- carrot 1 cup
- yellow cheese 0.5 cups
- broccoli sprouts 0.5 cups
- salt 1 to taste
Tools
- shallow dish
- water
Instructions
- Soak one rice paper sheet in water until just soft.
- Lay the softened rice paper sheet on the work surface and place some lettuce on one end.
- Add some carrot, cheese and alfalfa sprouts, then season to taste.
- Roll up to form an envelope.
- Place seam-side down and leave for a few minutes to set. Repeat with the remaining ingredients.
Serving suggestions
Serve straight away, or keep chilled and eat the same day; add a light dipping sauce. Makes 6 rolls — 2 per serving.
