Baked Homemade Fish Sticks with Tartar Dipping Sauce
Quick and easy baked fish sticks with a crispy, well-seasoned breadcrumb coating and tender, flaky fish inside. This kid-friendly recipe is freezer-friendly and works well for lunch, dinner, or as an appetizer.

- cod fillet 1.5 pounds
- salt 1 teaspoon
- ground black pepper 1 teaspoon
- Italian seasoning 2 teaspoons
- sweet paprika powder 1 teaspoon
- breadcrumbs 0.5 cups
- hard cheese 0.25 cups
- wheat flour 0.5 cups
- egg 2 pieces
- vegetable oil 1 to taste
- mayonnaise 2 tablespoons
- lemon juice 1 tablespoon
- pickled cucumber 1 tablespoon
- ground black pepper 0.25 teaspoons

Instructions
- Preheat the oven to 200°C (400°F).
- Pat the fish fillets dry. Season both sides with salt, ground black pepper, half of the Italian seasoning, and paprika, then cut the fillets into small sticks.
- In a mixing bowl, whisk together the breadcrumbs, the remaining Italian seasoning, and the grated Parmesan cheese. Prepare two shallow plates: one with flour and one with the beaten eggs.
- Dip each fish stick in the flour, then in the egg, and finally in the breadcrumb mixture. Press the coating gently onto the fish sticks and shake off any excess.
- Place the breaded fish sticks on a lined baking pan and coat them evenly with cooking oil spray. Bake until fully cooked through and golden brown.
- Serve immediately.
- Combine the mayonnaise, lemon juice, finely chopped dill pickle, and ground black pepper in a small mixing bowl and stir well until combined.

Serve immediately on its own or with tartar dipping sauce. It also goes well with fries, sweet potato wedges, a side salad, or roasted vegetables.
Storage suggestions
Let the fish sticks cool completely before storing in an airtight container in the refrigerator for up to 3 days. Freeze before or after baking for up to 3 months. To cook from frozen, bake a little longer until golden brown. Reheat cooked frozen fish sticks in a 200°C (400°F) oven for 10–12 minutes.
