  • corn 2 cups
  • cornmeal 0.25 cups
  • wheat flour 0.25 cups
  • egg 1 piece
  • hard cheese 0.5 cups
  • salt 1 pinch
  • ground black pepper 1 pinch
  • vegetable oil 1 cup

Instructions

  1. Heat the vegetable oil in a frying pan over medium heat.
  2. Add the corn, cornmeal, flour, egg, grated parmesan cheese, salt, and pepper to a medium-sized bowl.
  3. Mix everything together, then press portions of the mixture in your hand to form fritters.
  4. Add the fritters to the hot oil and gently press them down with a spoon or spatula to form patties.
  5. Fry until golden brown and crispy on both sides, turning halfway through.
  6. Remove the fritters from the pan and let the excess oil drain.

Serving suggestions

Reheat in a toaster oven to keep them crispy.

Storage suggestions

Freeze in an airtight container. Defrost at room temperature for about 1 hour, then reheat before serving.
