Ingredients

  • white rice 100 grams
  • white onion 1 piece
  • garlic clove 2 cloves
  • bell pepper 0.5 pieces
  • mushroom 6 pieces
  • ground turkey 200 grams
  • canned tomatoes 1 can
  • tomato paste 2.5 teaspoons
  • chicken stock 1.5 cups
  • yellow cheese 40 grams
  • rapeseed oil 2 tablespoons
  • salt 1 to taste
  • black pepper 1 to taste
  • sweet paprika powder 1 to taste
  • hot paprika powder 1 to taste
  • basil 1 to taste
  • oregano 1 to taste

Instructions

  1. Dice the onion, press the garlic through a garlic press, and cut the bell pepper and mushrooms into pieces.
  2. In a heated tablespoon of rapeseed oil, sauté the onion until translucent, then add the garlic, bell pepper, and mushrooms. Fry for a few minutes, stirring occasionally. Remove the vegetables from the pan onto a plate and wipe the pan with a paper towel.
  3. Pour another tablespoon of rapeseed oil into the pan and heat well. Add the ground turkey, season with salt, pepper, oregano, sweet and hot paprika. Fry until the meat is browned.
  4. Add the sautéed vegetables, dry rice, canned tomatoes, tomato paste, and chicken broth to the browned meat. Mix everything thoroughly.
  5. Bring to a boil, cover, and cook over low heat for about 30 minutes, until the rice absorbs the liquid. If needed, season to taste with salt, pepper, and herbs.
  6. Finally, sprinkle with finely chopped yellow cheese, cover the pan to let the cheese melt. Serve hot.

Serve warm on its own or as a filling for tortillas, crepes, or piadina.
