Instructions

  1. In a big bowl, combine the flour, honey, and yeast. Slowly pour in the water, stir with a fork, then add the salt.
  2. Add the olive oil and about half of the sesame seeds, if using. Mix until the dough comes together.
  3. Knead the dough by hand until smooth.
  4. Form the dough into a thick log, cover, and let it rest.
  5. Roll the dough into a long rectangular sheet, about 45–50 cm long and 12 cm wide.
  6. Brush one side with olive oil and dust generously with semolina flour.
  7. Flip the dough, brush the other side with olive oil mixed with a little water, and dust with the remaining sesame seeds or the optional seeds.
  8. Dust with more semolina flour, cover, and let rise at room temperature.
  9. Preheat the oven to 200C (400°F).
  10. Cut the dough into narrow strips.
  11. Hold each strip by the sides, stretching and twisting it into a thin breadstick.
  12. Bake in the preheated oven until crisp and lightly golden, checking a little earlier if needed.
