Ingredients
- chicken breast 1.5 pounds
- carrot 4 large pieces
- white onion 1 medium piece
- celery 2 pieces
- garlic clove 3 cloves
- extra virgin olive oil 3 tablespoons
- dried thyme 0.5 teaspoons
- dried parsley 0.5 teaspoons
- bay leaf 1 piece
- chicken stock 6 cups
- water 1 cup
- pasta 2 cups
Tools

- thermos
- boiling water
Instructions
- Place the chicken, carrots, onion, celery, garlic, olive oil, thyme, parsley, bay leaf, chicken stock, and water in the slow cooker.
- Cook until the chicken is tender and the vegetables are soft, about 6 hours on low or 4 hours on high.
- Remove the chicken, chop it into bite-size pieces, and return it to the slow cooker.
- Add the pasta, cover, and cook on high until tender.
- Discard the bay leaf and serve the soup immediately.
- Preheat the thermos by filling it with boiling water up to the fill line, close it, and let it sit for 5 minutes.
- Drain the water from the thermos.
- Fill the thermos with hot soup and seal it.
- Pack the thermos into a lunch bag with desired snacks and an ice pack, if needed.
